Peach Riesling crumble

A quick and easy dessert recipe.... I love this with vanilla ice cream!

Peach Riesling crumble

Serves 6

3 cups diced peach

1 cup Riesling

1 cup sugar

2 tsp. ground cinnamon

2 tbsp. cornstarch

2 tbsp. cold water

½ cup unsalted butter melted

½ cup all-purpose flour

½ cup sugar

1 cup rolled oats

6 x 1 cup, oven safe baking dishes

Preheat oven to 350 degrees Fahrenheit.

Peel and dice the peaches. Place in a bowl and reserve.

Mix water and cornstarch together and reserve.

In a medium pot, over medium heat, stir together sugar, Riesling and cinnamon. Bring to a boil.

Whisk in the cornstarch mixture and continue to boil for 1 minute.

Combine Riesling syrup with the diced fruit and fill the baking dishes ¾ full.

Combine all ingredients for the topping and sprinkle over the peach filling.

Bake in a preheated oven for roughly 30-40 minutes or until fruit is bubbling and sticky.
