Porcini and Rosemary Butter

Makes 1/2 lb Butter


This porcini and rosemary butter is featured with our September 2022 Discovery Pass Program pairing at Niagara College Teaching Winery. The Discovery Pass is a ticketed event put on by Niagara Wine Festival, featuring 18 VQA wineries offering sample sized food and wine pairings. It's a great way to discover new wines across the region, as well as adding some new recipes into your repertoire - which is why you're here!


Ingredients:


1/2 lb Butter, Unsalted

1 Tbsp Smoke and Barrel Porcini Rosemary Seasoning Salt

1 Tsp Black Pepper

1/2 Tsp White Pepper


Method:


Allow your butter to sit out and become room temperature; alternatively, dice the butter and microwave in 30-45 second intervals, stirring between each session, until butter is soft but not melted.

Add all additional ingredients into soft butter and whisk until fully incorporated.

At this stage, you have lots of options! You can set the butter into a shallow dish or ramekin, pipe it into rosettes, or roll it into a log and cut it into coins when you need it.

Place your butter back into the fridge and let it harden, or use it soft right away.


This compound butter is great on top of cooked steak, thrown in the pan for searing fish, melted on top of your favourite popcorn, or mixed into your pasta or risotto. Let us know how you're using it with the hashtag #sbniagara, and don't forget to follow us at @sbniagara!
